A Tasty Summer Treat!

A girl in my ward brought this dip/appetizer to a shower and I ended up having seconds! You will have to give it a try. It isn't the prettiest thing all mixed up, but it tastes good.

Cowboy Caviar
1 can white shoe peg corn, drained
1 can diced tomatoes, drained
1 can black eyed peas, drained
3-5 avocados (diced in little squares)
1 1/2 pkgs of Italian dressing mix (dry)
1 bunch of cilantro, chopped
2 T oilve oil
2 T red wine vinegar
juice of 1 fresh lime

Mix all together. Let stand at least 15 minutes before serving. Serve with a bag of Big Scoop Fritos!

Fun at the Lake.....

My sister Audrey and I took the boys and a friend to Rigby lake a couple weeks ago. Everyone had a great time splashing in the water, thowing mud balls at each other, and building some amazing volcanos and castles. It doesn't take much to please these little guys! It was a beautiful, hot day at the lake...I got a tan and Audrey got a burn!

Sleep Tight!

When we were young, my sister Audrey, our cousin Allie, and I (and others) were constantly sleeping on the trampline during the summer. We loved it! The scary stories, truth or dare, waking up to the sweating hot sun in the mornings, and being woke up by the crop duster airplane spraying the fields all around us! We had so much fun when we were kids. We had a "neighbor kid" that was usually out there with us. We were not always nice to him, but he sure made it interesting! Those were the days when that seemed a little more normal I think. My boys LOVE sleeping out on the tramp. Jared will sleep out there with them. I get to stay inside in my comfy bed!
What is it with little boys and pictures?? Most of the pictures I take have at least two Bunny Ears or more. And for some reason I think it's funny. I love these boys.

I Wish It Was Always Summer!!

I love Sunday evenings in the summer! The weather was perfect today, so the boys went out after dinner and played some baseball and played with our neighbor's dog. Jared played with them while I stood around watching and talking to the neighbors as they stroll by. And then of course the boys needed a major bath afterwards. I hope summer never ends.

Nothing Better Than A Brownie


First of all, I absolutely love brownies. They are almost my very favorite thing to eat. A cute little boy gave his talk today in Primary and talked about brownies! It was actually a really good talk. Primary couldn't have ended soon enough for me to race home and get a batch of of brownies in the oven. To prove how serious I am about them, my boys begged me to make cookie dough--and I told them "No, we are eating Brownies." So, there you have it- I love a good brownie.

Preschool Graduation

Last week was Rook's Preschool Graduation. We had it at his teacher's house...Miss Kelly's.
Rook loves Kelly. She has been watching him for me ever since he was born. I will be so sad if they ever move!
Rook and his buddy/cousin, Dawson. Rook insisted that his pants be pulled up as high as they would go and the belt as tight as it would go. He looks like his torso is way too short with a big head on top! Sad, but it wasn't worth more of the crying and fighting that morning. We were running late as usual.

This is most of Rook's class. They all look way too excited don't you think? It was a fun class!

School Is Out! .... (last Thursday)

I can't believe that the kids are already out of school! This school year flew by. Carter LOVED his 1st grade teacher, Mrs. Hill. I thought she was pretty great myself. I am now trying to prepare myself for a busy summer. I guess that is why I was a little sad about school being out because I love the kids having a schedule and being in a routine. So, to keep it fun we will spend our days at baseball games for Carter and Jared, swimming lessons, Ross Park, basketball camp, yard work, & playing with the neighbors & cousins. What could be better than that? Okay, so back to Carter's teacher, Mrs. Hill. I had a card for Carter to sign and give to her on the last week and this is what I found. I thought it was kind of sweet. Also, he came home with a little book of phone numbers of some of his friends from his class to keep in touch with this summer and he also got Mrs. Hill's phone number. He told me he got it for me so that I can call her. He wants me to call her to say Hi and tell her how much I like her! I keep putting it off and he keeps reminding me. I don't want call her, so I might just have to "pretend" that I did. I hope it's not bad to pretend....
